aqua london is dedicating an entire weekend to our tribute to love with tantalising tastes across both aqua nueva and aqua Kyoto.

Head Chef Alberto Hernandez’s labour of love is a four-course feast of Spanish delicacies with dishes including Seared scallops with black ink rice parcels and ‘San Sebastian’ style crab, Matured rib eye Galician beef with confit piquillos and potato gratin and a delicate Valentines cake made from Champagne mousse with edible gold almonds and raspberries.  Available in aqua nueva on both Saturday the 13th and Sunday the 14th of February, you can enjoy a romantic four-course meal with complementary glass of Veuve Clicquot champagne for £80 per person. aqua kyoto introduces ‘Food As Art’ menu

The exquisite, precise and colourful presentation of aqua kyoto head chef Paul Greening‘s Japanese cuisine often attracts comparisons with art, but for this new menu Paul has taken the association further, drawing inspiration from three contemporary Japanese artists.

In his ‘Food as Art’ menu Paul references the signature polka dots of Yayoi Kusama, bold, colourful abstracts of Tsuruko Yamazaki and the floral motifs of Ryoko Aoki. Available from 1st September – 30th November, the menu also coincides with FRIEZE Art Fair in October, where all three artists will be exhibited.

aqua kyoto’s Paul Greening at Grand Designs Live


On Sunday 3rd May, aqua kyoto’s head chef Paul Greening and his sous chef Ken Miyake took to the stage at popular annual lifestyle event Grand Designs, to demonstrate live how they make one of our most popular dishes – Suckling pork belly with unagi, wakame and Japanese root vegetables.

Twice during the day, Paul and Ken delighted large audiences of eager visitors with their skills, demonstrating the discipline that goes into preparing Japanese food – from using only the very finest produce, as explained by Paul in this video, to the cooking and presentation of the final dish.

Paul explained that a kitchen run, as his is, in the Japanese tradition is calm and contemplative, as opposed to the frenetic pace of a European kitchen. He certainly proved his point with his methodical and elegant preparation of the final dish, albeit all the while entertaining the audience with his passion and humour!

Fascinating fermentation

We’ve long been fascinated by aqua kyoto head chef Paul Greening‘s use of fermentation to create unique and exciting flavours in his Japanese cuisine, but now it seems that others are catching on too.
