aqua london is dedicating an entire weekend to our tribute to love with tantalising tastes across both aqua nueva and aqua Kyoto.

Head Chef Alberto Hernandez’s labour of love is a four-course feast of Spanish delicacies with dishes including Seared scallops with black ink rice parcels and ‘San Sebastian’ style crab, Matured rib eye Galician beef with confit piquillos and potato gratin and a delicate Valentines cake made from Champagne mousse with edible gold almonds and raspberries.  Available in aqua nueva on both Saturday the 13th and Sunday the 14th of February, you can enjoy a romantic four-course meal with complementary glass of Veuve Clicquot champagne for £80 per person. JING Tea training at aqua kyoto

To coincide with the launch of our new tea-infused menu at aqua kyoto, JING tea experts Kat and Tamara led a training session for the aqua kyoto team. The training session started with Kat explaining that the difference between white, green and black teas is where the tea leaves are picked from as there is a variety in both tea bushes and how you process the leaves. Kat presented two plates of tea leaves to show the selection of teas that we will be offering guests.

The first tea we tried was Darjeeling 1st Flush, clean, crisp and light with a rounded, satisfying finish. The sharpness of the tea marries the rich flavours of the Sencha tea asparagus tempura, wasabi sauce perfectly. Jade Sword, a green tea was the second tea we tasted; smooth but full flavoured with hints of grassy textures, which accentuated the umani flavours in the matcha tea maki, compressed cucumber, spicy tuna and green tea caviar.

The only white tea available on the menu is White Peony, an extremely delicate and delightfully refreshing tea which was extremely popular with the team. The well rounded notes of white peony that have a vegetal sweetness, is an ideal light partner to the bold flavours of the Hojicha braised octopus, mizuna salad, tensu yuzu foam. Read more +

New Year’s Eve at aqua London

You can choose which restaurant to dine in; innovative Spanish cuisine in aqua nueva or contemporary Japanese in aqua kyoto.  Dinner tickets are £130 and include a glass of Veuve Clicquot Champagne on arrival, entertainment during dinner and a DJ until 3am.

Bar tickets are also available for aqua spirit at £35 which include a glass of Champagne on arrival and DJ entertainment from 10pm.

The Mayor of London’s fireworks can be viewed from our stunning terrace overlooking the capital; the perfect way to welcome 2016!

‘Inspired by Goya’

To coincide with The National Gallery’s unmissable new exhibition honouring arguably Spain’s greatest artist, Goya, our head chef Alberto Hernandez has created a unique menu inspired by Goya’s works, Spain’s rich, artistic heritage and the region of Zaragoza where Goya was born.

Alberto met Dr Xavier Bray, the curator of Goya: The Portraits exhibition, to discuss the inspiration behind his dishes.

Alberto explains, “I spent time researching Goya’s works to find inspiration for the menu and to gain a deeper understanding of Goya’s use of colour. I wanted to capture the real essence of the paintings by using rich ingredients and vibrant colours throughout the menu.”

Inspired directly by Goya’s masterpieces, Zarzuela de pescadito y mariscos, a Spanish fish and seafood stew, is based on the ‘Still Life with Golden Bream’ painting, combining bream, mussels, octopus, lobster and prawns in a traditional Spanish broth. Read more +

London wins 24Hr Bar Build

24Hr Bar BuildOn the 10th October, 4 teams from worldwide cities battled it out to win the title ‘World’s Best’ in the 24HrBarBuild competition during London Cocktail Week.

The #LondonCalling team included our talented bar manager Luca Missaglia, emerged victorious against New York, Paris and Singapore.

With Patron Tequila central to their challenge Luca and his team mates turned people’s conceptions of tequila on their head by creating three unique cocktails (a green sour, a tiki walking dead and a negroni twist) with a back drop of a Mexican themed bar resplendent with cacti juxtaposed with stunning London skyline views. Celebrate World Sake Day at aqua kyoto

Sake, the elegant fermented rice wine, is a complex and delicious drink whose many varieties are as prized in Japan as Champagne is in France, but less appreciated outside of its native country.

World Sake Day, which occurs annually on 1st October, celebrates sake in all its forms as well as marking the traditional start of the sake production season. To celebrate World Sake Day, all guests joining us for dinner in aqua kyoto on Thursday 1st October will receive a complimentary sake aperitif. Our sommelier Carlo will also be on hand to help guests who would like to explore our comprehensive sake list in choosing one to complement their meal.

Matching sake to wine is a fascinating process; some sakes – the more typical varieties – have an aroma not unlike white wine but a smoother, some say almost nutty flavour. Darker varieties meanwhile have a more complex palate, while umeshu – plum – varieties are sweeter.

Todo El Mundo Lo Sabe - Everybody Knows It – is ‘a potent, compelling and fresh look at the culture of corruption, intrigue and excess spending’ starring Bárbara Santa-Cruz, Diego Toucedo and Juan Blanco. This is the UK premiere so you and your guest will be first in the country to see it!
