aqua london is dedicating an entire weekend to our tribute to love with tantalising tastes across both aqua nueva and aqua Kyoto.

Head Chef Alberto Hernandez’s labour of love is a four-course feast of Spanish delicacies with dishes including Seared scallops with black ink rice parcels and ‘San Sebastian’ style crab, Matured rib eye Galician beef with confit piquillos and potato gratin and a delicate Valentines cake made from Champagne mousse with edible gold almonds and raspberries.  Available in aqua nueva on both Saturday the 13th and Sunday the 14th of February, you can enjoy a romantic four-course meal with complementary glass of Veuve Clicquot champagne for £80 per person. After many months of planning and struggling to keep the exciting news under wraps, we’re absolutely delighted to let you know that we’re having an extensive refurbishment of aqua nueva this year. The restaurant will close this Sunday, 13th April, and will re-open in early June.

It’s the hallmark of aqua nueva chef Alberto Hernandez’s cuisine that he takes some of Spain’s most famous traditional dishes and reinvents them from a modern but highly respectful angle. Drawing on his years of experience at leading restaurants including world-renowned el Bulli, Alberto creates dishes which, while recognisable as the classics that inspire them, surprise and delight with their flavours, textures and technique.

A perfect example of this is Alberto’s Pulpo a la Gallega con su empanada. This is in fact a marriage of two dishes typical of GaliciaGallega - the largely coastal region in the far north-west of Spain; pulpo a la Gallega, or Galician-style octopus, and empanada Gallega, a savoury open-sided pastry.

Chef Alberto Hernandez, previously of world-famous restaurant El Bulli in Spain, has created a menu which honours the culinary heritage of his home country in a resolutely modern way, by updating familiar family dishes using creative, surprising cooking techniques and stunning presentation.

Mother’s Day, which this year falls on Sunday 30th March, is always a very special day and while of course we think mums deserve to spoilt every day of the year, we also think it’s great that they get to be the centre of attention on this day.
