A first taste of the #newnueva menu!

With the opening of the all-new aqua nueva just a few days away, chef Alberto Hernandez and his team have been busy putting the finishing touches to the menu. We were lucky enough to be invited to a tasting of some of Alberto’s new dishes recently and have been given the go-ahead to give you a preview of what’s in store.

Alberto’s menu has been designed to take into account the way many guests prefer to dine today – flexibly and informally. There are no starters or main courses; instead the menu is divided into three sections, Vegetables, Meat and Fish, with all portions around the same size. Diners are encouraged to order as few or as many as they would like – two or three per person would be our suggestion, but it is only that!

The dishes pictured here, all of which we highly recommend are Marinated crab salad with green apple, a crystal-clear liquid made from pressed and strained apples; Red mullet fillet with aioli and black ink rice parcels – classic arroz negro wrapped in fine puff-pastry; and Confit crispy pork and langoustines, topped with crispy pork cheek and complemented by smooth potato puree.

With twenty dishes to choose from priced from £4 to £12.50, the #newnueva menu makes it easy and affordable to try as many plates as appeal – the only challenge will be choosing which ones!
