It’s the hallmark of aqua nueva chef Alberto Hernandez’s cuisine that he takes some of Spain’s most famous traditional dishes and reinvents them from a modern but highly respectful angle. Drawing on his years of experience at leading restaurants including world-renowned el Bulli, Alberto creates dishes which, while recognisable as the classics that inspire them, surprise and delight with their flavours, textures and technique.
A perfect example of this is Alberto’s Pulpo a la Gallega con su empanada. This is in fact a marriage of two dishes typical of Galicia - Gallega - the largely coastal region in the far north-west of Spain; pulpo a la Gallega, or Galician-style octopus, and empanada Gallega, a savoury open-sided pastry.

Never underestimate an aqua london lady. Torrential rain, miserable running conditions and injury couldn’t – and didn’t – put off our intrepid team of runners who turned out last Saturday 28th June to run Race for Life, determined to do their bit to ‘beat cancer’s butt’.

We’re great romantics here at aqua so we’re delighted to be partnering with Suntory whisky to bring the touching Japanese tradition of Tanabata to London on Sunday 6th July.
By popular demand, we will be screening the England Uruguay game tomorrow, Thursday 19th June, on our terrace at aqua nueva! The large screen will be on from 7.30pm ready for the match at 8pm. Get here early to choose your spot and show some patriotic cheer! Enjoy some of our new delicious summer cocktails such as a Peach Melba; Ciroc peach vodka with Chambord, peach puree and lemon juice or a Ginger Collins; Tanqueray shaken with fresh ginger, lemon juice and finished with lemonade.
The weather is looking good tomorrow so we are sure to be rocking! You can either celebrate or commiserate (we’re crossing everything for the former!) on the aqua kyoto terrace or aqua spirit bar until late with our resident DJ playing until close.
Normal dress code does apply, so however much you may want to show your support, it’s still no sportwear, shorts or flip flops please! See you tomorrow.

Our address may be on glamorous Regent Street, but anyone who’s arrived at aqua via Oxford Circus station will know that we’re just a few short steps from Oxford Street too.
